Sweet Potato Breakfast Bites

- 6 Sweet Potato
- Tortilla Ingredients
- 1 Sweet potato
- 1/2 Cup water
- Cheesecloth
- 1/4 Teaspoon cayenne
- 1/4 Teaspoon cumin
- 1/4 Teaspoon garlic powder
- 1/4 Cup low-fat sharp cheddar, finely grated
- 1 Egg Pinch of salt, optional
- 1/8 Teaspoon pepper, optional
- Filling Ingredients
- 4 Eggs whisked
- 2 Tablespoons milk (low-fat or non-dairy)
- Pinch of salt and pepper, optional
- 1 Tablespoon olive oil
- 1/4 Cup onion, chopped
- 1/4 Cup cherry tomatoes, halved
- 4 Strips turkey bacon, cut into
- 1/2-inch pieces
- 1/4 Cup low-fat white cheddar, finely grated
- 2 Tablespoons cilantro, chopped
- Hot sauce
Instructions
As you prepare the baking sheet using wax paper, Preheat the oven to 400 F. For the tortillas, peel the sweet potato and grate it into fine pieces. Place on a microwave for 5 minutes. Using a cheesecloth, firmly squeeze out excess water until the potato bits lose all water.
Put the dried potatoes on a bowl and add cumin, cayenne, cheese, garlic powder, egg, cheese, salt, and pepper. Mix everything.
Scoop two mounds of the sweet potato mixture and place in a baking sheet. Spread the mount into 5-inch circles that are about 1/8 inch thick — Bake in the oven for 17-20 minutes or until crispy. To make the breakfast filling, whisk all the eggs and milk together then season with generous amounts of salt and pepper. Set aside.
After drizzling the olive oil in a pan, sauté the onion in low heat until it becomes translucent. Add the turkey bacon and tomatoes, keep sautéing until soft. Put the whisked eggs and keep stirring until cooked. Sprinkle white cheddar and mix until it’s melted. Put the sweet potato tortilla on a plate, add a few filling scoops and top it with cilantro and hot sauce. Fold the tortilla and enjoy the meal!
